Over 70 years ago, Mrs Fernandes started making curry pastes and pickles in Pune, India. Her authentic produce quickly found favour with the soldiers garrisoned locally, who couldn't stop to grind their own spices or preserve pickles.
Though much has changed with the passage of time, Mrs Fernandes' pastes and pickles are still made by her family in Pune, using only the best local spices and produce.
Use Ferns' Butter Chicken Paste to make a delicious, fragrant and authentic curry.
Ingredients - Water, Chilli Powder, Refined Sunflower Oil, Salt, Coriander Powder, Turmeric Powder, Fenugreek Powder, Cumin Powder, Ginger Powder, Garlic Powder, Acetic Acid , Cinnamon Powder, Cardamom Powder.
Butter Chicken Curry Recipe
Ingredients:
3 tsps Ferns' Butter Chicken Curry Paste
500g boneless Chicken pieces
1 Red Pepper, sliced (optional)
125g chilled Butter
250g canned Chopped Tomatoes
40ml Single Cream
½ tsp Paprika
200ml Chicken Stock Oil for cooking
Method:
Marinate the chicken pieces in the Ferns' Butter Chicken Curry Paste for at least 2 hours and preferably overnight.
Heat the oil, add the chicken and pan fry for 5 minutes, turning the pieces so the chicken is browned all over.
Place the chicken in an oven-proof dish and add the chopped tomatoes, red pepper, paprika and chicken stock and cook in the oven for 35 minutes or until the chicken is cooked through.
Remove the chicken from the sauce.
Add the butter and cream and stir off the heat.
Pour the sauce over the chicken and serve.
