Baigan Bhartha - An exotic dish from the northern region of India. Roasted to enhance the flavours, the aubergines are mashed with ginger, chillies and mixed spices. Serve as a main dish or a side dish with naan bread or chapattis.

Ingredients - Bringal (70%), Coton Seeds Oil, Tomato, Onion, Clarified Butter, Salt, Yoghurt, Chilli, Garlic, Coriander leaves, Ginger, Coriander, Turmeric, Cumin, Asafoetida, Citric Acid.

Directions - Place contents into a saucepan. Heat gently for 10 minutes, stirring occasionally. Or Microwave; Based on 650 watt oven. Empty contents into a microwave dish and heat on full power for 3 minutes stirring halfway through.
