Culinary Uses: Frequently used in Mexican dishes such as Chilli Con Carne and hot tamales. Cumin can be added to zesty lime or lemon based marinades for chicken, turkey, lamb and pork. It is also a good addition to chilli, spicy meat stews, barbecue marinades and sauces.
There are few Indian dishes that are not graced by cumins presence and the seeds are used in a wide variety of ways; from frying in hot oil to start a curry to sprinkling on naan breads before frying or added to dal or rice for extra flavour.
The seeds enhance the flavour of almost all vegetables and can make a highly flavoured coating for tandoori roasted meats.
